Following on from our original bread class, the e5 bakehouse Advanced Sourdough class offers you the opportunity to consider various aspects of sourdough baking in depth.

During this class you will learn the secret to making our popular hackney wild, a high hydration 100% heritage wholemeal loaf, and a sourdough Greek flatbread. Each one of these loaves uses a different sourdough leaven and gives an opportunity to better understand how they affect the flavours and textures of your sourdough. You will also learn how to incorporate porridge and sprouted grain into your loaves.

We will consider and discuss some further baking issues such as different milling techniques, the importance of organic farming, working with heritage grains, and understanding baker percentage and their use.

Please note: This class is designed for those who have already taken our sourdough essentials class or are confident home bakers looking to further their skills and knowledge of sourdough.

The course will be led by one of our experience bakers and offers an opportunity for students to engage with them on issues, obstacles and difficulties they've encountered in their own sourdough baking experiences.

Create steam in your oven to make crusty bread. When youre making bread, place a pan in the bottom of your oven as its preheating and fill it with cm of water to create steam. It will interact with the starch on the breads surface, helping to form a nice crusty layer.

The Host

The E5 Bakehouse is an East London artisan bakery and coffee shop. We are passionate about sourdough and the lost traditions of our baking ancestors. Using organic, locally-sourced ingredients, we serve delicious, daily-baked breads, fresh lunches, homemade cakes and coffee. Our head bakers also share their knowledge and expertise in a weekly bread course.
